Recipe for Puree of Dried Broad Beans

Put peeled dried broad beans, chopped onion, garlic and celery into a saucepan and add water to cover by 4cm. Simmer, uncovered until beans collapse. Drain, reserving liquid, then puree in a blender. Add as much of the liquid as you need to make a soft puree. Season to taste and add freshly chopped herbs or a squeeze of lemon juice. The puree will firm as it stands and swells.
